Vita-Mix Granola Bars

I love my Vita-Mix! If you don’t have one a regular blender will work for these bars. They say that they are granola bars…but I think they taste more like muffins. Either way, Hubby loved them and that’s all that mattered. I got the recipe from their website. (http://www.facebook.com/note.php?note_id=96078173549)

Vita-Mix Granola Bars


Yield:
15 Bars
Ingredients

1/4 cup wheat berries or 1/2 cup whole wheat flour
1/4 cup wheat germ
1/2 cup almonds
1 cup oats
1/4 tsp salt
1 tsp cinnamon
1 tsp vanilla
3 tablespoon honey or agave nectar
1/2 cup dried cranberries or cherries (I used raisins)
1 medium apple, cubed or 1 cup unsweetened applesauce

Directions

1. Place wheat berries, wheat germ, almonds and oats in the dry container and secure 2 part lid. Select Variable speed #1 and turn on machine. Quickly increase to Variable speed #10 and then to High. Blend for 40 seconds. Turn machine off.
2. Pour out into bowl.

3. Place apple into dry container and secure 2 part lid. Select Variable speed #1 and turn on machine. Quickly increase to Variable speed #10, then to High using the tamper to press the apple into the blades. Blend for 40 seconds or until consistency of applesauce. (I used apple sauce).
4. Pour into bowl with dry ingredients.

5. Add salt, cinnamon, vanilla, honey, and cranberries to mixture. Stir by hand until moistened.
6. Spread into greased 9×9 or 8×8 pan.
7. Bake at 350 F for 25 minutes.

They are perfect with nut butter on top 🙂 Now I need to find a more "granola-e" type granola bar. Do you have any recipes???
