Ok so we are on to day 4 of the RFC and finishing week 7 of the Kettlebell challenge, can you tell I am a little addicted to challenges?!!!
Workout
This morning before Jackie and I hit the gym I ate a banana with some PB.
Our workout was KILLER!!!!
Breakfast
For breakfast I made the best Whole-Wheat French Toast in the WORLD! Ok, maybe not in the world…but it was amazing.
Ingredients
- 2 pieces 100% Whole Wheat Bread
- 2 eggs
- 1/4 cup milk
- 1 teaspoon vanilla
- 1 teaspoon of cinnamon
- Butter for cooking
- 100% pure maple syrup for serving
Directions
Cut the bread into desired shape (triangles).
Whisk together the eggs, cream or milk, cinnamon and vanilla in a shallow dish.
One-by-one dip the bread into the egg mixture until it is evenly coated on both sides. Let the excess run off before transferring the pieces to a plate.
If you have a griddle turn it to 325 degrees F. If you don’t have a griddle don’t fret…any old sauté pan will do. If using a pan place it over medium heat.
Melt a teaspoon or two of butter in your pan/griddle then add the first batch of battered bread. The key is for the finished product to be cooked all the way through by the time the outside turns brown so the heat should not be too high.
Cook until golden brown on both sides.
Serve warm with pure maple syrup and a side of fruit. Enjoy!
I enjoyed mine with some fresh strawberries and blackberries 🙂
I actually sat down and savored every bite (with a side of fresh tangerine juice).
I am enjoying my FP Misto (made with 1%milk) while I blog 🙂
Off to work!!!!
I got my packed lunch ready to go 🙂
Happy Friday.
P.S. Fit Friday Baking Coming this afternoon…stay tuned!!!
Question: When was the last time you sat down for breakfast and really savored every bite?
