Lunch Platter
I had to scrounge a bit to come up with a delicious and healthy lunch. Are cupboards and fridge are so bare!! Thank goodness I had a loaf of Natures Path, whole wheat bread in the freezer
I made a scrumptious sammie with a veggie patty from TJ’s, lots of spinach, tomato, and cucumber.
With a sweet and crunchy Gala apple
Since I was home I made another batch of Crock Pot Butter Nut Squash Soup. This will be great for lunch this week
Now I just need to figure out what to do with these bad boys?? I have already plenty of banana bread, banana and PB cookies, now what?!!!
I enjoyed resting with my feet up most of the day

I am so glad my stomach is just about back to normal. It’s funny how rest, water, real food and down time can really be the best medicine
Maybe I’ll actually make it to the grocery store today, or maybe not…time will tell.
