Brown Sugar Rubbed Veggies

I could not be happier that I had today off to recuperate from the fun weekend! I still have another post to re-cap about the Foodbuzz festival so be on the look out this week.

Today I tackled some “chores” and this messy catch all room!


Much better 🙂 Some how our laundry room never stays clean!!


One of the many wonderful things that I received at the fest this weekend was this Brown Sugar Pork Rub by Tyler Florence. I don’t normally eat pork, but I knew it would taste amazing on anything.


I was excited to get back to my clean eats!! I sprinkled some rub on a block of firm tofu chopped up and I added a little Corkey’s BBQ sauce.


I also sliced up a small sweet potato and sprinkled a little EVOO and rub on top.


I stuck both the tofu and sweet potatoes in the oven for 20 minutes at 400 degrees. While they were baking away I steamed some mini brussels sprouts in the microwave.  I love this mini casserole dish my Mom gave me last year for Christmas. I seem to never use it!



A couple weeks back I purchased this Pumpkin Pasta Sauce from World Market and haven’t had time to try it out. I am not sure what it would taste like on pasta, but it sounded like a good sauce for my veggies.




After. It look a lot like yellow curry 🙂 It tasted perfect on top of my meal. Sweet and savory all at the same time!


Best part is, I have leftovers!!!


Today, I also cleaned up the rest of the house!


Love staring the week with a fresh and clean kitchen 🙂


I also did some other projects around the house, I will have to show you all soon!

I took a rest from working-out. After running 13 miles yesterday, I wanted to give my body REST! Tomorrow I will be back in the gym and  back to work 🙂

side note–>Hubby started basketball coaching today so I feel a little single, I miss my MAN!
