LUNCH
So this weekend I got a little more creative when I went to the market. I am posting some fun tips tomorrow.
I made a bean salad to start with. Mixed lettuce and spinach with red and white beans. Plus some chopped tomato and a little balsamic vinegar.
I also made some butternut squash soup this weekend and enjoyed a cup to go along with my salad.
On the side I had two light Laughing Cow’s with some Whole Wheat Triscuts.
Such a yummy and satisfying lunch combo 🙂
