NHS Time in the kitchen!
Last night I made the most delicious Salmon. I think a lot of people are afraid to make fish because it seems hard to cook. Well fear not, salmon is super EASY to make!
Mango Salmon
Preheat oven to 350 degrees and drizzle a shallow cookie pan with EVOO. Place salmon filets with skin facing down and sprinkle salt and pepper on top of salmon.
Take half a lemon and drizzle juice over salmon. Bake salmon for 20 minutes in the oven.
Nothing like a super cute apron to make this sweaty beast look like a professional. Don’t worry more to come about the apron, I smell a give-away coming 😉

The salmon came out perfect!! This meal was so easy and delicious. I placed the salmon on a 1/2 cup of brown sticky rice and topped it with fresh Mango Salsa from F&E. Would love to say I made this salsa myself, but it was actually cheaper to BUY it!
On the side I had some fresh steamed spinach.
This meal took less then 30 minutes to make and it was REAL FOOD!
I was double fisting tonight with my water and wine 😉
Nothing like wine and fish.
