Morning lovelies, only one more day until Friday!! Let’s all celebrate just because 😉
Last night Hubby had the best dinner! I love being able to be flirty in the kitchen!
On the menu Turkey Meatballs and Whole Wheat Spaghetti. The challenge do make it quick and easy. Timer ready GO! (this was my old timer when I worked at Starbucks)
I looked up an easy Turkey Meatball recipe online, but of course didn’t stick with it and made up my own 😉 Thanks Danica for the inspiration!
First I started my pasta noodles and cooked for 9-10 minutes.
Then I busted out all the ingredients I had on hand.
Easy Turkey Meatballs
- 1 lb ground turkey
- 2 handful panko bread crumbs
- 2 tbsp Worcester Sauce
- 2 tbsp Italian seasoning
- 2 egg whites
- dash of pepper and garlic salt
Directions:
Preheat oven to 350 degrees. Throw all ingredients in a large mixing bowl and gentle mix together with your hands. Take handful of meat mixture and form into large meat balls. In a large skillet heat up some EVOO, this one is my favorite.
Take a moment to laugh as Hubby is going out to tackle yard work!
Then place meatballs in skillet and cook for 2- 3 minutes on each side. After you have seared them for a couple minutes on each side, place them on an oiled cookie sheet and put in the oven for 15 minutes.
I went to go find some marinara sauce in the oven and discovered that we were all out, so I made some of my own with these fun ingredients!
I even used 2 tbsp of the Bertolli sauce I was sent through the Foodbuzz Tastemaker program back in March. It is pretty heavy in fat and cream so I only used a little to thicken up the sauce.
All went into the same pan I used to cook the turkey, for added flavor of course. I first added the can of tomato paste and then slowly added in the chicken broth until the consistency was just right. Then in went all the spices and featured a Bertolli sauce.
I opened up a bottle of my favorite Cab!
Topped my meatballs and sauce over a bed of ww pasta and added a little slice of fresh mozzarella.
I should have been Italian!
Dinner was divine 🙂
Hubby and I also went out and got some FRO-YO last night to make the evening complete 🙂

This morning I went on an hour long bike ride with friends and it was so nice outside. I love riding in the mornings, but it was a bit chilly!
Time to grab my oats and toppings and run out the door!!!!
